Could Nephi really gather every seed of every kind?

And it came to pass that we had gathered together all manner of seeds of every kind, both of grain of every kind, and also of the seeds of fruit of every kind. 1 Nephi 8:1

It's a monumental task that Nephi and his family took on, creating a sort of "Noah's Ark" for grains and seeds, in order to bring the Mediterrean food supply to the New World.

Some of foods do appear in Central America, but that doesn't mean they were brought over by the Nephites.

Could they have gathered all these things?  Yes, possibly, but it would have taken a lot of time and a lot of space on a ship to transport them across the sea.

Between gathering seeds and engraving brass plates, when did Nephi get all this time?
